Maitake gravy can be put on mash potatoes, stuffing, any kind of game bird, wild game meat, chicken, and steak. Maitake mushrooms have a meaty chew texture. It goes well with fresh herbs to give more woody earthy tones.
1.Instructions : In a saucepan over medium high heat, melt 1 tablespoon of butter. Add the onion, Garlic and saute, stirring occasionally until tender and brown ( about 5 minutes )
2.Add the mushrooms, thyme, olive oil to coat, and a dash of salt to saute, stirring the mushrooms till they become tender ( 10 Minutes )
3.transfer to a bowl and set aside once sauteed.
4.In the same saucepan, melt 3 tablespoons of butter. Add in the flour, whisking to remove any lumps, ( if you are using almond flour then add 1/2 of the flour in and then add the other 1/2 after you put in the stock) Slowly add in the wine and stir till it is smooth. Slowly add the stock in stirring until it is smooth. Let simmer for ( about 5 minutes) then add the sauteed mushroom mix to the saucepan and stir to combine, Simmer for ( about 5 minutes )
5.Taste and season to your liking with Salt and pepper.
6.Now Enjoy your Maitake Mushroom Gravy
Ingredients:
4 Tablespoons butter (For Healthy Choice you can use Earth Balance butter)
1 Small yellow onion, Very finely chopped
10 oz. of Maitake Mushrooms Finely chopped
2 teaspoons fresh thyme leaves chopped
Olive oil to coat your pan
Pink Himalayan salt and Fresh ground pepper for taste
1/4 Cup of flour (For Healthy choice 1 cup Almond flour)
1/4 Cup of dry white wine
2 1/2 Cups of low sodium Vegetable Stock or whatever stock you prefer (For Healthy choice go organic)
