This can be a great holiday recipe or a fun dinner for something different. Cornish hens are rustic, little, delicate and rich in flavor. It makes for a fun plate when each person gets their own little hen. This is a two part recipe with the hens and stuffing to stuff inside these little tasty birds.
1.Oven instructions for Hens or Crock pot : Preheat oven to 350 degrees or crock pot on high
2.Coat a small amount of olive oil over hens and rub in and set to the side
3.In a small bowl, combine dried Rosemary, dried thyme, garlic salt, pepper and salt (for taste) Sprinkle this over the four hens and rub evenly over hens set aside.
4.In a large saucepan heat oil and add the mushrooms, sauté until soft and golden brown then set to the side in a bowl.
5.Now for the stuffing : In a large saucepan heat oil and add the mushrooms, sauté until soft and golden brown then set to the side in a bowl.
6.In the same saucepan, heat butter, add onion, celery, apple, sauté until soft then add fresh rosemary, fresh thyme and the sauteed mushrooms back into sauce pan and cook (about 5 minutes)
7.Remove heat and add 1 egg (beaten)use only if you make your own stuffing , add broth and cubed bread mix (bread should be toasted prior too cutting it into cubes) use only if you make your own stuffing OR You can use the 10oz bag stuffing mix into the sauce pan and follow the broth and butter measurements for that specific mix.
8.Stuff hens with mixture and put in a ovenproof baking pan and cook at 350 degrees for 1 1/2 hours OR you can stuff the hens and stick them in a crock pot on high cook 4 hours
