Dried oyster mushrooms have a mild, sweet flavor. They make an excellent meat substitute, and are a good source of protein and vitamin D. After re-hydrating in warm water for 30 minutes, add to any pasta, rice, grain, or egg dish for a meaty texture. They pair well with both white meats and seafood.
Other flavors that enhance the oyster mushroom are Asian greens, soy, ginger, garlic and vinegar. Their meaty texture allows them to hold up to stir-frying, baking, and braising.
