Winter Wheat is nearly identical to rye berries, just ever so slightly smaller. In fact if you didn't know differently, you'd assume it was rye berries. It can be utilized equally well in just about all spawning and cultivation projects that would typically utilize rye. With the current shortage of rye, these are the next best thing (if not equally as good)!

Once colonized with mushroom mycelium the rye spawn can be used to inoculate bulk substrates, or transferred to more sterilized grains to expand the mushroom mycelium further. In some cases the rye can be utilized as a direct fruiting medium and grow block.
