This elusive little red-brown mushroom is somewhat difficult to find and just as hard to identify correctly. It's look alikes, although not poisonous, donot have the intense maple, walnut flavor of the Candy Cap. When you have tasted the real thing, it is easy to see why Chefs are willing to pay upwards to $200 for a dry pound. Pickers think it should be worth more. Candy Cap oil is also great as a stir fry oil for vegetables or fish, or as a dipping oil.

Oyster Creek uses the Candy Cap oil in their mushroom vinaigrette, which is good as a marinade as well as a salad dressing.
