Cornish Hen with Maitake Stuffing

Cornish Hens with Maitake Mushoom Stuffing

Ingredients :

1/2 teaspoon fresh rosemary

1/2 teaspoon fresh thyme

1/2 teaspoon dried rosemary

1/2 teaspoon dried thyme

1/2 teaspoon garlic salt

Salt and pepper to taste

4 Cornish Hens , rinsed and dried

1 tablespoon olive oil

1 tablespoon butter ( For Healthy Choice Earth Balance Butter )

1 medium yellow onion diced

2 celery ribs diced

3 cups sliced Maitake mushrooms

1 egg beaten

1 small apple diced

1/2 cup of low sodium veggie or chicken broth

1 cup cubed dry bread

For a faster way to make stuffing you can use 10oz Organic arrow head mills or other organic stuffing mix (follow the bag instruction on the liquids and butter to use in the stuffing mix)

Preparation :

Oven instructions for Hens or Crock pot :

Preheat oven to 350 degrees.

Coat a small amount of olive oil over hens and rub in and set to the side

In a small bowl, combine dried Rosemary, dried thyme, garlic salt, pepper and salt (for taste) Sprinkle this over the four hens and rub evenly over hens set aside.

In a large saucepan heat oil and add the mushrooms, sauté until soft and golden brown then set to the side in a bowl.

In the same saucepan, heat butter, add onion, celery, apple, sauté until soft then add fresh rosemary, fresh thyme and the sauteed mushrooms back into sauce pan and cook (about 5 minutes)

Remove heat and add 1 egg (beaten)use only if you make your own stuffing , add broth and cubed bread mix (bread should be toasted prior too cutting it into cubes) use only if you make your own stuffingOR You can use the 10oz bag stuffing mix into the sauce pan and follow the broth and butter measurements for that specific mix.

Stuff hens with mixture and put in a ovenproof baking pan and cook at 350 degrees for 1 1/2 hours OR you can stuff the hens and stick them in a crock pot on high cook 4 hours or slow cook them 8 hours.
